TAHCHIN an Original Persian Dish



This was our lunch for the weekend it was very delicious Liam & walter loved it very much, I added some grilled Aubergine and mushrooms and chicken compare to original reciepe which is only chicken added to the mixed rice.

The ingredients are : 2 cups of Basmatie rice, 1 teaspoon Saffron dissolved in hot water,
Butter, a small pot yogurt, 1 beaten egg( which I elimated because I do 'nt like eggs!)
6 Chicken fillet( which are previously cooked with onion, saffron , lemon juice salt & pepper),
1 sliced grilled Aubergine and 6-7 mushrooms sliced and grilled.

Cook rice in enough salt water until outside of rice korn cooked and inside is still hard and raw, rinse it add 1 table spoon butter yogurt the dissolved saffron mix it well addthe cooked chicken , aubergine and mushroom put it in a teflon pot with some oil, puta lid on it and cook it on slow flame for about 30-40 minutes! CousCous Salad

This is one of Liam 's favourite dishes, and it is really quick so today when I came back from work I made it.
Just put a teaspoon of maroccan spice in a bit heated oil add couscous, stir it for two minutes, pour the dissolved vegatable stock in water on it (let say 250 g couscous needs ca 500cc water or vegtable stock), turn the heat off put the lid on wait for 15 minutes, add some more olive oil fresh pressed lemon juice salt and pepper, some tossed pine nuts and some coriandar leaves. It is also a perfect side dishe for chicken!

Mango Sweetcorn Salad


Here is the salad I made yesterday for dinner, with mangoes red onion & fresh sweet corn shortly fried in olive oil, added to avocado Kiwi and rocket salad plus lemon juice salt and pepper, it was really delicious loved the taste of slightly fried mango which made it to taste sweeter!
